Chicken &
Waffles

Served with pork or chicken maple sausage

Saturday, half past nine in the morning. Dew still clinging to the edges of the greens, the patio umbrellas half open, as if they too had just woken up.

My wife had challenged me the night before. Loser buys brunch. I accepted with the confidence of a man who has never read a green correctly in his life.

Hole 3. A sidehill putt, maybe fifteen feet, breaking right off a slope I swore was flat. I aimed at the cup. The ball went somewhere else entirely, like it had another appointment.

I bought brunch.

Chicken and waffles. Crispy chicken tenders stacked on a sweet waffle, and then, poured over the whole arrangement, Mike's Hot Honey. Sweet first, then the heat, then sweet again, a conversation that never quite ends. The crunch of the tenders against the give of the waffle. Honey pooling in the squares like rain on a cobblestone street.

And on the side, you choose: pork sausage or chicken maple sausage. She took the chicken maple. I took the pork. We traded bites anyway, because that is what fourteen years of marriage gets you.

She was three strokes up by the turn. I didn't mind. I had sticky fingers, a full plate and a front-row seat to the best morning of the month.
